Daddy's Dark Pumpernickel
Bread
This will make a 1 lb. loaf
1 1/4 cup bread flour
2 tsp brown sugar
3/4 cup rye flour
2/3 tsp instant coffee granules
1/2 cup whole wheat flour
2 tsp caraway seeds (opt)
1 tbsp dry milk
1 1/2 tbsp cocoa powder
1 tsp salt
2 tbsp molasses, dark
1 tbsp butter
7 1/2 oz water
3 tbsp cornmeal
1 tsp yeast
Add ingredients to your bread machine in recommended order. In the
Panasonic, add the dry ingredients first, then the liquids. If using
Fleishmans yeast, increase amount!
Date Nut Bread (bread machine)

1 pound loaf
1 cup water
1 tbsp butter or margarine, softened
2 1/4 cups bread flour
2 tbsp sugar
1 tbsp dry milk
1 tsp salt
1 1/4 tsp dry active yeast
3/4 cup *dates; chopped
1/3 cup *nuts; chopped
1 1/2 pound loaf
1 1/3 cups water
2 tbsp butter or margarine;
-softened
3 1/2 cups bread flour
3 tbsp sugar
2 tbsp dry milk
2 tsp salt
2 1/2 tsp dry active yeast
1 cup *dates; chopped
1/2 cup *nuts; chopped
*As soon as you press start, set a separate minute timer for 15 minutes,
at which time add the Dates and Nuts.
Not for Timer Bread Setting
Follow operating instructions for chosen size of bread.
Date Nut Bread (bread machine)
This dark colored, flavorful bread will have you going back for more even
if you think you don't like dates.
3/4 cup water
1 1/3 tbsp. vegetable oil
2/3 tbsp. molasses
2/3 tsp. salt
1 1/3 tbsp. unsweetened cocoa powder
1 cup whole wheat flour
1 cup bread (or all purpose) flour
1 tsp. yeast

If you have a raisin bread cycle, add these at the beep, otherwise, add at
the beginning:
2 1/2 tbsp. chopped dates
2 1/2 tbsp. chopped nuts
Follow the setting instructions for your bread machine.
