Sundried Italian Herb
Bread
This is a very tasty bread that you can make in your bread machine. Serve
it warm or toasted and it also makes great grilled cheese sandwiches. It
goes great with any Italian dish.
For a 1 1/2 pound loaf:
2 1/4 tsp active dry yeast
1/2 cup buttermilk (room temp)
3/4 cup water (room temp)
1 tsp lemon juice
2 tbsp dark brown sugar
2 tbsp unsalted butter (room temp)
3 cups bread flour
1 tsp salt

6 slices sundried tomato, diced (not packed in oil)
1 1/2 tbsp Italian herb blend (or use the garlic and herbs listed below):
1/2 tsp garlic powder and minced onion
3/4 tsp marjoram leaves, thyme leaves, leaf rosemary, oregano leaves, basil
leaves and savory
1/2 tsp rubbed sage
Add ingredients in the proper order for your machine. Select white bread
setting; medium crust or normal baking cycle. I add spices and tomatoes when
machine beeps after initial mixing cycle.

1/4 cup plus 3 tbsp water
1 tsp lemon juice
4 tsp dark brown sugar
4 tsp unsalted butter (room temp)
2 cups bread flour
3/4 tsp salt

Sun-Dried Tomato and Ricotta Bread

2 3/4 cup bread flour
1 1/2 tsp yeast
1 tsp salt
1/3 cup sun-dried tomatoes in oil; drained, patted dry, and
iced
1 tsp fresh rosemary; minced
2/3 cup warm water
2/3 cup nonfat ricotta cheese
1 tbsp olive oil
Put all ingredients except tomatoes in machine according to manufacturers
directions and run on 'white bread' cycle, adding tomatoes at raisin beep.
If machine has no 'add raisins' signal, add them about 5 minutes into the
second knead. Be sure and check the dough consistency after a couple of minutes
of the first knead; add more bread flour if necessary to achieve the correct
consistency.
Sundried Tomato, Herb and Parmesan Bread
9 oz water
2 3/4 cups bread flour
2 tbsp dry milk
1 tbsp sugar
1 tsp salt
3 tbsp parmesan
2 tbsp sun dried tomatoes
1 tsp oregano
1 tsp thyme
1 tsp basil
2 tbsp butter
2 tsp yeast
Add the ingredients in the order your bread machine requires, and process
as usual.
Sun-Dried Tomato and Rosemary Bread (bread machine)

1 1/4 cups water
1/4 cup unsalted dried tomatoes, snipped
2 tablespoons shortening
2 tablespoons sugar
1 teaspoon salt
3 3/4 cups white bread flour
1 teaspoon crushed rosemary
1/2 teaspoon paprika
1 1/4 teaspoons yeast
Measure ingredients in the order listed into bread machine baking pan. Select:
Basic bread setting. Select regular or dark crust. Cool on a wire rack before
slicing
