Seeded Rye Bread
1-1/2 lb loaf
1-1/2 cups water
1-1/2 tablespoons oil
2 tablespoons molasses
1-1/2 teaspoons salt
1-1/2 tablespoons caraway seed
1-1/3 cups rye flour
2-1/2 cups bread flour
1/4 cup nonfat dry milk powder
2-1/2 teaspoons yeast
Put ingredients in machine according to manufacture's directions for YOUR
machine. Bake on a 'whole wheat' cycle. Check after 4 - 5 minutes and either
add water or flour (by tablespoon) to get correct consistency.
Seven Grain Bread (Bread Machine)
For 1 1/2 lb. loaf
1 1/8 cup warm water
1 1/2 Tbsp vegetable oil
2 tsp. honey
1 1/2 cup whole wheat flour
1/4 cup brown rice flour
1/4 cup spelt flour
1/4 cup buckwheat flour
1/4 cup rye flour
1/4 cup oatmeal
1/8 cup cornmeal
1/4 cup gluten
1 tsp. salt
1 1/2 tsp. dry yeast
For 2 lb. loaf
1 1/2 cup warm water
2 Tbsp vegetable oil
1 Tbsp honey
2 Cups whole wheat flour
1/2 cup brown rice flour
1/3 cup spelt flour
1/3 cup buckwheat flour
1/3 cup rye flour
1/3 cup oatmeal
1/4 cup cornmeal
1/3 cup gluten
1 tsp. salt
11/2 tsp. dry yeast
Add all ingredients to bread pan in the order given. Note: If you can't find
all these grains: just use more whole wheat or another grain.
Shaker Potato Bread (Food Processor)
2 cups boiling water
2 peeled potatoes
1 package yeast
1/2 cup sugar
6 1/2 cups bread flour
1/2 teaspoon salt
2 eggs
1/2 cup cold butter
1 beaten egg
1 tablespoon milk
Cut potatoes into quarters and boil in the water until tender. Drain and
dry. Save 1 cup potato water. Puree 1 cup potato. With plastic blade in place,
add 6 cups flour, yeast, sugar and salt. Add potato puree, eggs, potato water
and butter cut into bits. Process to to form ball. Add flour if necessary
and process 40-50 seconds, until dough is smooth. Place dough in a greased
bowl, cover, rise 1-1/2 hours or until doubled. Grease 2 loaf pans. Punch
dough down, divide in two parts. Shape into 2 loaves. Place in pans. Let
rise 45 minutes. Brush tops with egg-milk glaze. Bake in 375F oven for 35
minutes or until loaves sound hollow when tapped. Cool on wire racks.
Yield: 2 Loaves.

Shortcut Sourdough Corn Bread
Makes one 1 1/2 lb. loaf
2/3 cup Plain low-fat yogurt
1/3 cup Milk
1 tablespoon Butter or margarine
1 teaspoon Salt
2 3/4 cups Bread flour
1/2 cup Cornmeal
1 tablespoon Sugar
2 teaspoons Bread machine yeast
Add ingredients to machine in order given by manufacturer, adding the yogurt
with the milk.
Basic/white bread cycle. Medium/normal color setting.
Yogurt is the secret ingredient that gives the tang reminiscent of sourdough.
NOTE: Yogurt varies in moisture content. If dough is too stiff or dry, add
some milk. If too soft or slack, add some flour.
