use with my bread machine, and this is by FAR my favorite (I have the update
2002 Hermes House Edition, but it is essentially the very same book)! Recipes
are very easy to follow (no impossible to find ingredients), and directions
are concise. I have yet to have a recipe turn out anything but a wonderful,
tasty loaf of bread... and the aroma is to die for!!! I love the numerous
photographs too! Buy this book if you are thinking of buying ANY breadmachine

White Bread
1 1/4 c. milk
2 Tbs. sugar
2 Tbs. butter
1 tsp. salt
3 Tbs. dry milk
3 c. bread flour
3 Tbs. soy flour (I get it at the health food store)
3 Tbs. wheat germ
2 1/4 tsp. yeast
Add the ingredients in the order listed.
I put the soy flour in a 1 cup measuring cup and finish off with bread flour,
then add the additional 2 cups of bread flour.
It sounds like there are some weird ingredients in this, but I promise, it
tastes just like regular old homemade white bread, but the soy flour, wheat
germ and dry milk can be omitted if you don't want the nutrition boost.
I've also found that if you put the cooled loaf in a plastic bag for a few
hours or overnight that the bread can then be sliced without getting crumbs
all over your kitchen floor! Enjoy your bread machine!
Whole Wheat Bread
Made in the Breadmaker (1 1/2 pound loaf)
1 cup lukewarm milk
3 T. warm water
4 tsps. honey or sugar
1 T. butter
1 1/2 cups whole wheat flour
1 1/2 cups bread flour
3/4 tsp. salt
1 tsp. yeast
Spray the baking pan and the paddle with PAM. Put the ingredients in the
breadmaker in the order listed here. Select the basic white cycle and the
light or medium crust.
Whole Wheat Bread For Bread Machine
For 1 1/2 lb. bread machine
1 1/4 cups water
2 tablespoons olive or vegetable oil
1/4 cup honey or maple syrup
3 to 3 1/2 cups 100% white whole wheat flour or classic whole wheat flour
1/4 cup sunflower, sesame or flax seeds, or a combination (optional)
1 tablespoon vital wheat gluten
1 1/2 teaspoons salt
1 1/2 teaspoons instant yeast
Put all of the ingredients into the bread pan in the order listed. Program
for basic white bread, and press Start.
Whole Wheat Cinnamon Bread
1 1/2 tsp. yeast
2 cups whole wheat flour
2 cups white bread flour
1 1/2 tsp. salt
1 1/2 tsp cinnamon
1 tbsp. sugar
1 tbsp. brown sugar
2 tbsp. dry milk
2 tbsp. butter
1 1/4 cup plus 2 tbs. warm water
5 minutes before the end of the second kneading (my machine has a bell at
that time) add the following:
1/2 cup raisins
1/2 cup chopped walnuts
