The secret to moist banana bread is the banana! The secret is in the ripeness of your fruit. Bananas are green when under-ripe, yellow when ripe, and yellow with brown spots when a little over-ripe. When they are very brown, they are ready to yield deliciously moist banana bread.

Choose overripe, even black, bananas for these recipes. When you do, you will be rewarded with a sweet, moist banana bread.

Some of these moist banana bread recipes use pudding mix, some use sour cream, some use pineapple, some use milk or yogurt. Enjoy!



Moist Banana Bread
2 loaves (change servings and units)

Ingredients

* 1/2 cup butter or margarine, melted
* 1 3/4 cups sugar
* 2 ripe bananas
* 3 eggs
* 1 1/2 cups flour
* 1 teaspoon baking soda
* 1/8 teaspoon salt
* 3 tablespoons sour cream
* 1 teaspoon vanilla
* 1 cup chopped nuts (optional)

Directions

1. Preheat oven 325°F.
2. Spray 2 loaf pans with non-stick spray and dust with flour.
3. Cream the bananas and sugar together with your mixer.
4. Add melted butter and mix.
5. Beat eggs and add to mixture. Mix.
6. Add flour, baking soda and salt. Mix.
7. Add vanilla, sour cream, and nuts if desired. Mix.
8. Pour into 2 loaf pans and bake for 50-55 minutes or until toothpick inserted into center comes out clean.




Moist Banana Bread

4 bananas ripe
1 egg
1 cup sugar
1 1/2 cups flour, all-purpose
1 teaspoon salt
1 teaspoon baking soda
1/4 cup butter or margarine, melted
1/2 cup walnuts  or pecans
1/2 cup chocolate chips
Directions

Mash bananas by hand or with mixer until fairly smooth Add all other ingredients in order, mixing as you go.

Add melted butter last.

Pour into 1 greased and floured loaf pan or 2 small loaf pans and bake at 325 degrees F. for 50 to 60 minutes.



Special Moist Banana Bread

INGREDIENTS

* 1 cup regular or butter-flavored shortening (may substitute with applesauce)
* 2 cups white sugar (may substitute 1/2 brown  sugar for the white)
* 6 very ripe bananas, mashed
* 4 eggs
* 2 1/4 cups all-purpose flour
* 1 teaspoon salt
* 2 teaspoons baking soda
* 2 teaspoons ground cinnamon
* 1 teaspoon ground cloves
* 1 teaspoon freshly grated nutmeg
* 1 cup chopped walnuts

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Spray two 9x5 inch loaf pans with non-stick cooking spray.
2. Cream the shortening and sugar until light. Beat in the eggs one at a time.
3. Sift together the flour, salt, baking soda, cinnamon, cloves, and nutmeg. Add to the shortening mixture and mix to combine.
4. Thoroughly mash the bananas. Stir bananas into the batter then stir in the walnuts. Pour the batter into the prepared pans.
5. Bake at 350 degrees F (175 degrees C) for 45 minutes to 1 hour or until a wooden skewer inserted near the center comes out clean. Check with a wooden skewer every 15 minutes after 45 minutes of baking. It can take up to 65 to 70 minutes to cook.



Banana Sour Cream Moist Bread

INGREDIENTS

* 1/4 cup white sugar
* 1 teaspoon ground cinnamon
* 3/4 cup butter
* 3 cups white sugar
* 3 eggs
* 6 very ripe bananas, mashed
* 1 (16 ounce) container sour cream
* 2 teaspoons vanilla extract
* 2 teaspoons ground cinnamon
* 1/2 teaspoon salt
* 3 teaspoons baking soda
* 4 1/2 cups all-purpose flour
* 1 cup chopped walnuts (optional)
* dash of nutmeg and ground cloves
DIRECTIONS

1. Preheat oven to 300 degrees F (150 degrees C). Grease four 7x3 inch loaf pans. In a small bowl, stir together 1/4 cup white sugar and 1 teaspoon cinnamon. Dust pans lightly with cinnamon and sugar mixture.
2. In a large bowl, cream butter and 3 cups sugar. Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Hand mix in salt, baking soda and flour. Stir in nuts. Divide into prepared pans.
3. Bake for 1 hour, until a toothpick inserted in center comes out clean.

Crumble Topping:
* 1/2 cup packed brown sugar
* 1/2 cup all-purpose flour
* 2 or 3 tablespoons butter or margarine
* 1 teaspoon cinnamon
* 1/3 cup chopped walnuts or pecans.
Microwave the butter for just a while to make it nice and soft, mixed it all together with a fork until it is crumbly, and spoon it over the loaf before putting it in the oven.




Very Moist Banana Bread Recipe

Ingredients:
2 cups sugar
½ tsp salt
2 ¼ cups flour
½ cup vegetable oil
3 large eggs
1 tsp vanilla
1 1/3 tsp baking soda
¼ cup buttermilk (I use sour milk – 1 tsp vinegar added to milk)
1 cup chopped nuts
4-5 very ripe bananas. (use completely black bananas, this is very important)
Directions:
In a large bowl, mash bananas with a masher or by well washed hands.

Dissolve soda in buttermilk (sour milk) [use a larger container as it will foam up quite a bit]

Mix all ingredients by hand and add in 1 cup chopped nuts. Pour into 2 prepared loaf pans. Bake at 350º for 1 hour, or until toothpick comes out ALMOST clean. Totally clean means a dryer loaf.

Let cool 15 minutes after removing from oven and remove from pans.

Wrap in clear wrap or storage bags (will keep about 3 days) or Wrap in foil, slide into freezer bags and freeze.



Moist Banana Bread Recipe

1/2 c. vegetable oil
1 1/2 c. sugar
2 eggs, well beaten
1 tsp. vanilla
1/4 tsp. salt
1 1/2 c. sifted flour
1 tsp. baking soda
1/3 c. buttermilk
3 ripe bananas, mashed
1 c. walnuts, chopped (optional)

Cream the oil and sugar together in a bowl; then add the eggs, vanilla and salt. Mix well. In another bowl, combine the baking soda and buttermilk. Add flour and the baking soda/buttermilk combo alternately. Add the mashed bananas. Gently fold in the optional walnuts. Grease two regular size loaf pans. Pour half the batter into each pan and bake for 45 minutes at 350 degrees. When the bread separates from the side of the pan and a toothpick inserted comes out



Moist Banana Bread Recipe

Ingredients:

1 1/2 cup flour
1 tsp. salt
1 tsp baking soda
1 cup sugar
1 egg
1/4 cup butter, melted and cooled

Instructions:

Preheat oven to 325 degrees

Measure out how many cups of bananas you have. I like to peel and freeze my bananas as they get overripe so I have some on hand when I want to make banana bread. If I have more than one cup of bananas, then I can double or triple the recipe and give some loaves away.

In a bowl, stir together flour, salt and baking soda. Set aside

In another bowl, combine bananas and sugar. Stir well. Add egg and butter. Blend. Pour liquid ingredients into dry and mix until moistened. Pour into greased loaf pan.

Bake at 325 degrees for 55 to 60 minutes (insert toothpick and if it comes out clean, it’s ready). Let cool 10 minutes then turn out onto a rack. Completely cool before slicing.



Moist Banana Bread

1 Egg

1/4 c Melted butter or margarine
1/2 c Walnuts (optional)

(may still appear slightly lumpy). Add all other
ingredients in order, mixing as you go. Add melted
butter last. Pour into 1 greased and floured loaf pan
or 2 small loaf pans and bake at 325 degrees for 50 to
60 minutes. Note: If possible, grease pan with Butter
flavored Crisco or use butter.



Moist Banana Bread Recipe

1/2 cups of oil
1 cup of sugar
2 eggs
3 ripe bananas mashed to a paste
2 cups of all-purpose flour
1/2 teaspoon of salt
1/2 teaspoon of fresh baking powder, always use fresh powder
1 teaspoon of baking soda, again making sure it’s fresh
3 tablespoon of milk
1 teaspoon of vanilla
1/2 cup of chopped pecans


Moist Banana Bread Recipe Instructions:

1. Preheat your oven to 350 degrees as you mix the ingredients for the bread together.

2. Mix the sugar and the oil. Add the eggs and mashed bananas and blend very well.

3. Sift your dry ingredients and remove all of the lumps. Add to the eggs and banana mixture and again blend well until creamy smooth.

4. Add the milk and the vanilla and stir in the pecans. Pour the batter into a well greased, floured loaf pan. Bake for 1 hour. Remove from oven and let cool for 10 minutes before serving.



Moist Banana Bread

Ingredients:

* 1/2 cup butter
* 1 cup granulated sugar
* 3-4 very ripe bananas, mashed
* 1 large egg
* 1 tsp. vanilla
* 2 cups all-purpose flour
* 1 tsp. baking soda
* 1/2 tsp. baking powder
* 1/4 tsp. salt
* 1 tsp. cinnamon
* 1/2 cup chopped walnuts (optional)
* 1/2 cup semisweet chocolate chips
Preparation:

1. Melt butter and let cool to room temperature.

2. Preheat oven to 350 degrees F. Grease a loaf pan.

3. In a large mixing bowl, beat melted butter and sugar together. Beat in mashed bananas, egg and vanilla.

4. In a medium bowl, whisk together flour, baking soda, baking powder, salt and cinnamon.

Note: Be careful to measure your flour accurately.
5. Fold flour mixture into wet ingredients until just combined. Do not over-mix, or the bread will turn out tough.

6. Stir in nuts and chocolate chips. Pour into prepared loaf pan.

7. Bake 45-60 minutes until firm to the touch and a knife inserted in the center comes out clean.



Hemp Heart Moist Banana Nut Bread Recipe

INGREDIENTS

2 eggs

1/3 cup applesauce

2/3 cup sugar

1 1/4 cups whole wheat flour

1/2 cup Hemp Seed Flour

2 3/4 tsp. baking powder

1/2 tsp. salt

1 cup mashed very ripe bananas (about 3 medium)

1/4 cup Shelled Hemp Seeds

1/4 cup chocolate or carob chips (optional)



DIRECTIONS

Preheat oven to 300 degrees. Mix first 3 ingredients with mixer at medium speed until pale yellow.

Add dry ingredients alternately with bananas to mixture. Mix at medium speed until well blended.

Pour into greased or sprayed loaf pan (9 x 5 or 8 1/2 x 4 1/2). Bake 45-60 minutes, until cake tester comes out clean and dry. Let cool in pan 20-30 minutes before turning out onto rack.

Makes: 1 loaf

Prep Time: 10 min.

Cook Time: 45-60 min.



Sugar-free Moist Banana Bread Recipe

INGREDIENTS

3bananas, mashed
3/4cup splenda sugar substitute
2eggs
2cups flour
1teaspoon salt
1teaspoon baking soda

DIRECTIONS

Mash bananas, add sugar and eggs. Sift together flour, salt and baking soda. Add to banana mixture. Pour into greased and floured loaf pan. Bake at 325 F for 1 hour.



Dairy Free Moist Banana Bread Recipe

The two cups of mashed bananas make this a very moist banana bread.

Ingredients
2 c. overripe bananas, mashed
1/2 c. Earth Balance vegan "butter"
1 1/2 c. unbleached all-purpose flour
2 eggs, beaten
1 c. sugar
1 tsp. baking soda
1 tsp. vanilla
1/2 t. salt

Directions
Preheat oven to 350 degrees.

Cream butter and sugar together with a wooden spoon. Add beaten eggs and mix them in.

Add vanilla, baking soda, and salt.

Add mashed bananas and flour and mix everything well. There may be a few small banana lumps but that's okay. If you prefer a perfectly smooth batter you can use a mixer.

Pour mixture into a loaf pan and bake at 350 degrees for 90 minutes or until a toothpick comes out clean. It's a good idea to start checking for doneness at about 60 minutes.'



Moist Banana Bread

1 1/2 cup sugar
2 eggs
1/4 teaspoon baking powder
3 large very ripe bananas
1/2 cup nuts
1/2 cup butter
1/2 teaspoon baking soda
1 1/2 cup flour
1 teaspoon vanilla

Blend together sugar, butter, and eggs. Add dry ingredients, which have been sifted together. Add mashed bananas, chopped nuts, and vanilla. Pour into a greased loaf pan.

Bake at 375°F degrees for 1 hour.


Moist Banana Bread

1 1/4 c. flour
1 c. sugar
1/2 tsp. salt
1 tsp. soda
1/2 c. shortening
2 sm. bananas or 1 c. puree
2 eggs, well beaten

Mix dry ingredients and shortening. Puree bananas and add to flour mixture. Add well beaten eggs. Bake in greased loaf pan at 350 degrees for 40 to 45 minutes or until done. Nuts can be added.


Moist Banana Bread

2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/4 tsp. nutmeg
2 eggs
1/2 c. butter
2 tbsp. buttermilk or regular milk
1 tsp. ReaLemon
1 c. sugar
3 med. bananas
1 c. nuts (optional)

Heat oven to 350 degrees. Grease loaf pan. Mix flour, baking powder, salt, baking soda and nutmeg in a large bowl. Put eggs, butter, buttermilk, lemon juice and sugar into blender and mix until smooth. Add bananas and nuts; continue to mix. Pour into dry ingredients and mix only until flour is moistened. Pour into prepared pan and bake 45-50 minutes.


Moist Banana Bread

2 c. sifted flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/4 tsp. nutmeg
2 eggs
1/2 c. soft butter
2 tbsp. buttermilk
1 1/4 inch slice of lemon, peeled
1 c. sugar
1 1/2 c. sliced bananas (3 med.)
1 c. nuts, (chopped)

Sift flour, baking powder, salt, baking soda and nutmeg together into large bowl and set aside. Put eggs, butter, buttermilk, lemon and sugar into blender; cover and mix until smooth. Add bananas; continue processing until smooth.


Moist Banana Cherry Bread

2 c. sugar
1 c. butter
4 eggs, beaten
4 c. flour
1 tsp. salt
1 tsp. baking powder
2 tsp. soda
5 lg. or 6 med. bananas
1/2 c. or more maraschino cherries (halved)
1 c. chopped nutmeats

Cream butter and sugar. Beat eggs until light and add. Sift together 3 times the flour, salt, baking powder, and soda. Add to creamed mixture a little at a time. Add slices of banana alternately with flour; beat well. Then stir in nuts and cherries.

Line greased pans with wax paper. Makes 4 small loaves or 2 medium ones. Bake in preheated 350 degree oven for 40-45 minutes until a toothpick comes out clean. Cool in pans; remove waxed paper. Wrap in foil and refrigerate or freeze.


ANN'S MOIST BANANA BREAD

1/4 lb. butter
1 c. sugar
1 1/4 c. self-rising flour
3/4 tsp. soda
1/2 tsp. salt
2 eggs
2 c. bananas, mashed
1/2 c. pecans
1/2 c. golden raisins, soaked in warm water & drained

Mix butter and sugar. Add flour, soda and salt. Add eggs and bananas; mix well. Add nuts and raisins. Bake in loaf pans at 350 degrees for 40-45 minutes, depending on size of pan. Sprinkle top with powdered sugar.

MOIST AND RICH BANANA BREAD

4 eggs, beaten
1 c. half and half
1/2 c. of butter and a 1/2 c. of butter
1 tsp. banana extract
2 c. sugar
5 med. sized bananas, mashed
1 c. finely chopped nuts or raisins (optional)

Blend above ingredients until smooth and add:

4 c. flour
2 1/2 tsp. baking soda
1/2 tsp. salt

Mix well and bake in 3 well greased and floured loaf pans at 350 degrees until done. About 1 hour. Makes 3 loaves.


HIGH FIBER BANANA BREAD - MOIST &
HEALTHY!


2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3 medium ripe bananas (mashed)
7-8 pitted prunes (cut into small pieces)
7-8 pitted dried apricots (cut into small pieces)
2 tablespoons fat-free or low-fat milk
1 cup all-bran cereal (original or extra fiber)
1/3 cup softened butter substitute
1/3 cup maple syrup
2 eggs

* Preheat oven to 350°F.

1. In a small bowl, mix flour, baking powder and baking soda and set aside.

2. In mixing bowl, stir together (mix well) mashed bananas, cereal, milk and dried fruit. Use masher to mix and mash well. Let mixture stand 5 minutes to soften cereal.

3. In mixing bowl, beat butter substitute and maple syrup; add eggs and beat well. Stir in cereal mixture. Add flour mixture, and stirred until combined.

4. Spread batter into a loaf pan coated with cooking spray. Bake at 350°F for about 45-50 minutes or until toothpick comes out clean. Let cool 10 minutes before removing from pan, and cool completely before slicing.

EXTRA MOIST BANANA BREAD

3 c. flour
1 tsp. soda
1 tsp. each - cinnamon, ginger, nutmeg
2 c. sugar
1 tsp. salt
1 c. nuts (optional)

3 eggs
1 1/2 c. salad oil
1 (8 oz.) can crushed pineapple, undrained
1 1/2 tsp. vanilla
2 c. mashed bananas

Sift dry ingredients, add remaining ingredients. Stir with a wooden spoon only until well blended. Pour into two greased loaf pans and bake at 350 degrees for 60-80 minutes.


MOIST BANANA BREAD

Cream and add: 1 c. butter 4 eggs, beaten

Add alternately with bananas: 1 c. oatmeal (uncooked) 1 tsp. salt 1 tsp. baking powder 2 tsp. soda 5 lg. or 6 med. bananas

(2 loaves). Sprinkle with dry oatmeal. Bake at 350 degrees for 40-45 minutes or longer. Watch tops so they don't burn. If tops are browning too much, cover with tin foil. Test center with toothpick.


MOIST CHOCOLATE CHIP BANANA BREAD

1/2 c. butter
1 1/2 c. sugar
2 eggs, beaten
1 c. mashed bananas
1 c. chopped nuts
3/4 c. chocolate chips
3 tbsp. sour cream
1 tsp. soda
1/4 tsp. salt
1 1/2 c. flour

Sift together soda, salt and flour. Mix together, pour into greased and floured loaf pan. Bake at 350 degrees for 1 hour. Can also be baked in cans size of 2 1/2.


VERY MOIST BANANA BREAD

3 c. sugar
3 eggs
1/2 tsp. vanilla
3 c. bananas, or more (I use 5-6 bananas)
2 tsp. soda
1 1/2 tsp. salt
3 1/2 c. flour
1/3 c. water
1 c. oil
1 tsp. cinnamon
1 c. nuts

Makes 2 large loaves of bread. Put in 2 greased and floured loaf pans and bake at 350 degrees for 45 minutes to 1 hour.
