The secret to moist banana bread is the banana! The secret is in the ripeness of your fruit. Bananas are green when under-ripe, yellow when ripe, and yellow with brown spots when a little over-ripe. When they are very brown, they are ready to yield deliciously moist banana bread.

Choose overripe, even black, bananas for these recipes. When you do, you will be rewarded with a sweet, moist banana bread.

Some of these moist banana bread recipes use pudding mix, some use sour cream, some use pineapple, some use milk or yogurt. Enjoy!



Impossibly Moist Banana Bread

Ingredients

* 3 very ripe bananas
* 2 eggs
* 1/2 cup soft butter
* 1 1/2 tablespoons sour cream
* 1 cup sugar
* 2 cups flour
* 1/2 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1 teaspoon vanilla
* 3/4 cup pecan, chopped (walnuts or any nut of your choice works)

Directions

1. Preheat oven to 350 degrees.
2. Put all ingredients in a large bowl and mix well.
3. Pour batter into one greased loaf pan.
4. Bake at 350 degrees for 55-60 minutes, until a knife comes out of the center clean.
5. Let the banana bread cool then cut into slices as needed.




Moist Banana Bread Recipe

On the positive side, Cavendish bananas develop a rich banana flavor the darker the skin becomes. So a mushy, brown banana will add a strong banana flavor to your banana bread. If you are looking to bake a moist banana bread recipe, the darker your banana the better. Over-ripe bananas add a lot of moisture to baked goods.

Ingredients

* 3-4 very ripe bananas
* 2 cups of all-purpose flour
* ¾ cup sugar
* ¾ teaspoon baking soda
* ½ teaspoon of salt
* 1 ¼ cups chopped walnuts
* ¼ cup vegetable oil
* 2 large eggs, well-beaten
* ¾ stick of butter, melted
* 1 teaspoon of vanilla


Instructions

1. Set one rack in the center of your oven.
2. Preheat oven to 350 degrees.
3. Spray a 9x5x3 bread pan with non-stick spray or grease the pan with butter and dust lightly with flour.
4. Whisk the flour, sugar, salt, and baking soda together until well-mixed.
5. Using your stand mixer with the paddle attachment, mix together the bananas, oil, eggs, butter, and vanilla.
6. Add the dry ingredients to the wet ingredients with the mixer set to low.
7. Add the walnuts.
8. Pour the dough into the prepared pan.
9. Bake the banana bread for 55 minutes or until a toothpick inserted into the center of the bread comes out clean. Check the bread after 45 minutes.
10. Cool the pan on a rack until cool to the touch.
11. Turn the pan upside down and de-pan the bread.


Very Moist Banana Bread Recipe

Ingredients

* 1/4 cup butter
* 1 1/3 cups sugar
* 2 eggs
* 1 teaspoon vanilla
* 2 cups flour
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 3/4 teaspoon salt
* 1 1/2 cups very ripe bananas (skins should be very dark)
* 1/2 cup chopped walnuts
* 1 cup sour cream


Directions

1. Cream butter and sugar till light and fluffy.
2. Add eggs and vanilla
3. Beat Well.
4. Sift dry ingredients and add alternately with bananas and sour cream to the mixture. Mix well. Add Nuts
5. Pour into 2 greased and floured loaf pans. (approx. 8"X4")
6. Bake at 350* for about 45 minutes, until the top is golden brown and a toothpick comes out basically clean (with tiny ball-like pieces stuck to it is fine, it doesn't have to come out completely clean, but not wet and goopy)

Ingredients

* 1 cup sugar
* 2 eggs
* 1/3 cup water
* 1 teaspoon baking soda
* 1/4 teaspoon baking powder
* 1/4 cup soft butter
* 4 ripe bananas, mashed
* 1 2/3 cups flour
* 1/2 teaspoon salt
* 1/4 cup flaked coconut

Directions

1. Cream butter and sugar.
2. Add beaten eggs and water.
3. Mix in mashed bananas.
4. Mix dry ingredients and add til moistened.
5. Pour into greased loaf pan.
6. Bake 1 hour 350°F.




Moist Banana Bread Recipe

This is a very moist bread thanks to the two cups of mashed bananas it contains.

Ingredients
2 c. overripe bananas, mashed
1/2 c. butter
1 1/2 c. unbleached all-purpose flour
2 eggs, beaten
1 c. sugar
1 tsp. baking soda
1 tsp. vanilla
1/2 t. salt

Directions
Preheat oven to 350 degrees.

Cream butter and sugar together with a wooden spoon. Add beaten eggs and mix them in.

Add vanilla, baking soda, and salt.

Add mashed bananas and flour and mix everything well. There may be a few small banana lumps but that's okay. If you prefer a perfectly smooth batter you can use a mixer.

Pour mixture into a loaf pan and bake at 350 degrees for 90 minutes or until a toothpick comes out clean. It's a good idea to start checking for doneness at about 60 minutes.


Moist Banana Bread
2 loaves

Ingredients

* 1/2 cup butter or margarine, softened
* 1 cup sugar
* 2 large eggs, slightly beaten
* 1 cup mashed very ripe banana (about 3 medium)
* 1 teaspoon vanilla extract
* 1 1/2 cups flour
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 3/4 cup plain yogurt
* 1 cup chopped nuts, preferably toasted
* 2 tablespoons wheat germ (optional)

Directions

1. Preheat oven to 375 degrees.
2. Cream margarine and sugar.
3. Add eggs, beating well.
4. Beat in bananas and vanilla until well blended.
5. Stir dry ingredients together; combine with first mixture.
6. Stir in yogurt and nuts.
7. Pour into 2 small (7 x 3") greased loaf pans or 1 large (9 x 5") greased loaf pan.
8. If desired, sprinkle wheat germ over top.
9. Bake 1 hour for small loaves and 80 minutes for large loaf.
10. Do NOT under-bake as the yogurt makes this very moist.

* 1 tsp baking powder
* 1/2 tsp baking soda
* 1/2 tsp salt
* 1/2 C butter
* 1/2 C sugar
* 2 eggs
* 1 C mashed banana
* 1/2 C chopped walnuts


Directions

1. Sift flour,baking powder,soda & salt together
2. Cream butter; beat in sugar gradually
3. beat in eggs 1 at a time
4. stir in bananas into flour mixture until well blended
5. fold in nuts
6. pour into greased 9x5x3" pan
7. bake at 350*

Ingredients

* 1/2 cup butter
* 2 eggs
* 3 large very ripe bananas
* 1 1/2 tablespoons sour cream or buttermilk
* 1 teaspoon fresh lemon juice
* 1 cup sugar
* 2 cups flour
* 1/2 teaspoon baking soda
* 1 1/2 teaspoons baking powder
* 1 cup chopped nuts (optional)

Directions

1. combine dry ingredients in large mixing bowl.
2. Place butter,eggs,bananas,sour cream,and lemon juice in blender or work bowl of food processor,whirl until smooth.
3. Pour over dry ingredients,add nuts and stir until just moist.
4. Pour into greased loaf pan.
5. Bake in 350 degree oven for 55-65 minutes or until skewer inserted comes out clean.




Moist Banana Bread

Ingredients

* 2 eggs, beaten
* 1/3 cup buttermilk
* 1/2 cup vegetable oil
* 1 cup mashed banana (about 2-2 1/2 medium bananas)
* 1 1/2 cups white sugar
* 1 3/4 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 cup chopped nuts (optional)

Directions

1. Preheat oven to 325 degrees.
2. Spray one 9 X 5 inch loaf pan with non-stick cooking spray.
3. Blend together the eggs, buttermilk, oil and bananas.
4. Sift together the sugar, flour, baking soda and salt.
5. Add to banana mixture.
6. Stir in nuts.
7. Mix well.
8. Pour into prepared loaf pan.
9. Bake 1 hour and 20 minutes, or until a cake tester inserted in center comes out clean.




Super Moist Banana Bread

2 loaves

Ingredients

* 1 cup oleo, softened
* 2 cups sugar
* 4 eggs
* 5 large bananas, mashed
* 1 (4 ounce) box instant banana pudding mix
* 2 teaspoons baking soda
* 1 teaspoon salt
* 2 cups flour
* 1 cup chopped nuts

Directions

1. Cream oleo and sugar.
2. Add eggs and beat well.
3. Add pudding (dry), then the bananas.
4. Sift together the dry ingredients and add to mixture.
5. Grease 2 large loaf pans and dust with sugar. Bake in a 350 degree preheated oven for one hour. Remove from pans and cool on wire racks.




Big Moist Banana Bread

Ingredients

* 2/3 cup sugar
* 1/3 cup soft shortening
* 2 eggs
* 1/4 cup milk
* 1 cup mashed banana
* 2 cups sifted flour
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 cup chopped walnut

Directions

1. Mix together sugar, shortening and eggs.
2. Stir in milk and bananas.
3. Sift together and stir in flour, baking powder, soda and salt.
4. Blend in chopped nuts.
5. Pour into well greased 9 x 5 x3 inch pan.
6. Let stand for 20 minutes before baking.
7. Bake at 350 degrees until it tests done (50-60 minutes).




Moist Banana Bread Recipe

3 c. flour
1 tsp. soda
1 tsp. each - cinnamon, ginger, nutmeg
2 c. sugar
1 tsp. salt
1 c. nuts (optional)

3 eggs
1 1/2 c. salad oil
1 (8 oz.) can crushed pineapple, undrained
1 1/2 tsp. vanilla
2 c. mashed bananas

Sift dry ingredients, add remaining ingredients. Stir with a wooden spoon only until well blended. Pour into two greased loaf pans and bake at 350 degrees for 60-80 minutes.


Moist Banana Bread Recipe Ingredients

* 3-4 ripe bananas, smashed
* 1/3 cup melted butter
* 1 cup sugar
* 1 egg, beaten
* 1 teaspoon vanilla
* 1 teaspoon baking soda
* pinch of salt
* 1 1/2 cups all purpose flour

Preparation

Again this moist banana bread recipe requires no mixer so put that thing away

Preheat oven to 350F

In a large bowl mix bananas and butter then stir in sugar, egg and vanilla. Finally sprinkle baking soda and salt over mixture and stir.

Pour moist banana bread batter into 4X8 inch loaf pan and bake for one hour. Let cool on a rack before slicing. enjoy.


Moist Banana Bread


Ingredients for one loaf:
3 or 4 ripe bananas
1 egg
1 cup sugar
1 1/2 cups flour
1 tsp. salt
1 tsp. baking soda
1/4 cup melted butter or margarine
1/2 cup walnuts (optional)
1/2 cup chocolate chips (optional)

Directions:
Mash bananas by hand or with a mixer until fairly smooth (the batter may still appear slightly lumpy). Add all other ingredients in order (skipping) the butter, mixing as you go. Add the melted butter last. Pour into 1 greased and floured loaf pan or 2 small loaf pans and bake at 325 degrees for 50 to 60 minutes.

Note: If possible, grease pan with butter flavored crisco or use butter.

Super-yummy Super-moist Banana Bread

Ingredients

* 1/2 cup (1 stick) Butter, softened
* 1 1/4 cups Granulated Sugar
* 2 Eggs
* 4 tbsp. Sour Cream
* 1 1/2 cups Flour, all-purpose (white)
* 1 tsp. Baking Soda
* 1 tsp. Vanilla Extract
* 1.5 cups (2-3) ripe Bananas, mashed (NOTE: Original recipe called for 1 cup and baked a little less, but I usually use more banana and bake it a wee bit longer. The tracker includes the extra bit of banana!)

Directions
1. Grease 9" x 5" loaf pan.
2. Beat together butter and sugar.
3. Add eggs. Mix well.
4. Add sour cream, flour, baking soda, vanilla, and bananas. Mix well.
5. Pour into prepared loaf pan.
6. Bake at 350 degrees F for 45 - 70 minutes, or until toothpick in center comes out clean.
7. Cool on rack, and wrap in plastic wrap overnight to bring out the moisture in the bread.
8. Makes 1 loaf, cut into 14 slices about 5/8" thick each.
9. Enjoy! :)



Whole Wheat Banana Nut Bread
INGREDIENTS

* 1/3 cup vegetable oil or applesauce for low fat
* 1/2 cup honey - or 1/4 cup honey and 1/4 cup brown sugar
* 1 teaspoon vanilla extract
* 2 eggs
* 1 ( or 1 1/4) cup mashed bananas
* 1 3/4 cups whole wheat flour
* 1/2 teaspoon salt
* 1 teaspoon baking soda
* 1/4 cup hot water
* 1/2 cup chopped walnuts
1/2 tsp. cinnamon (optional)

DIRECTIONS

1. Preheat oven to 325 degrees F (165 degrees C).
2. In a large bowl, beat oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Blend in chopped nuts. Spread batter into a greased 9x5 inch loaf pan.
3. Bake for 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing.
